Ever have one of those moments when you wish you had thought things through just a tad longer?  On a recent family vacation outing we experienced regret first hand.  Oh, there were those individuals that tried to open our eyes.  Observing my seven-months pregnant belly, the man at the river kayak ticket counter politely offered the half-trip version and assumed we were renting only two kayaks.  The glance I received from Mark said it all.  “We can do this—3 kayaks & halfway nothing.”  Ok. Off we go!

Our first hour was bliss… gorgeous scenery,
sunshine, just “living the dream” (another kayaker’s comment).  Then it began.  “My arms are tired.”  “I’m hungry.”  “This is boring… blah, blah, blah.”  Then the whining turned into tears and torment.  Mark jerry-rigs Aidan’s kayak to his own.  The kids have their own agenda.  As frustrated parents our empty threats to “please cooperate or we’re leaving you in the river” start to fly.   The ‘normal’ time it takes to get down the river is approximately 2.5 hours.  We pulled into the kayak rental dock just under 4 hours.  In a chipper voice, the kid at the dock asks “So how was your trip?!”  The exhausted and exasperated look on our faces said it all—and he didn’t say another word! We should have listened...  

Thankfully, we recall this story now and laugh!  As summer comes to a close we hope, you too, have had memorable moments.

OVEN DRIED TOMATO RECIPE

Here’s an easy and delicious way to enjoy our wonderful
local tomatoes this month… sun dried style (but in the oven!)

Ingredients: 
- 4 Pounds Tomatoes (great for Roma, Cherry etc.)
- Salt to Taste

♦  Preheat oven to 200 degrees F

♦  Wash and halve tomatoes. Gently squeeze out the seeds. Place tomatoes on a non-stick cookie sheet, sprinkle with salt to taste.  (May also drizzle with olive oil, add basil, garlic etc.)  Bake until tomatoes take on a leathery texture. This could literally take all day (approx. 7 hrs.+); smaller pieces will require less oven time.  Refrigerate in airtight container.
