Ever have one
of those moments when you wish you had thought things
through just a tad longer? On a recent family vacation
outing we experienced regret first hand. Oh, there were
those individuals that tried to open our eyes. Observing my
seven-months pregnant belly, the man at the river kayak
ticket counter politely offered the half-trip version and
assumed we were renting only two kayaks. The glance I
received from Mark said it all. “We can do this—3 kayaks &
halfway nothing.” Ok. Off we go!

OVEN DRIED TOMATO RECIPE
Here’s an easy and delicious way to enjoy our wonderful
Ingredients:
♦ Wash and halve tomatoes. Gently squeeze out the seeds. Place tomatoes on a non-stick cookie sheet, sprinkle with salt to taste. (May also drizzle with olive oil, add basil, garlic etc.) Bake until tomatoes take on a leathery texture. This could literally take all day (approx. 7 hrs.+); smaller pieces will require less oven time. Refrigerate in airtight container.
